No, the SFDMU can't create/update metadata information.
Export and import of metadata are not supported by SFDMU, as this tool is intended solely for data migration and not for metadata modification.
You must have identical object definitions in both the source and target orgs unless you map your sObject/field to a different one using the Fields Mapping feature.
